Raw Vegan Corn Chips
So anyone can make raw vegan salsa, but what about the corn chips with which to eat the salsa? Well I've got a recipe that works great for this. It's easy and quick to prepare. Plus the taste and crunch are pretty darn close to that with which your already accustomed.
Ingredients
1 3/4 cups flax meal
1 bag (4 cups ish) frozen corn, thawed
1 1/3 cups water
2 1/2 Tbsp olive oil
1 Tbsp cumin
1/3 cup shallots or red onion
1 lg garlic clove
1/4 Tbsp salt
4 tsp lemon or lime juice
dash of cayenne
2 tsp chili powder
Set flax meal to the side and blend all other ingredients in your Vitamix or high speed blender. Once well blended combine the mixture with the flax meal. Stir well. Apply a 1/8 - 1/4 inch thick layer to wax paper covered dehydrator trays. This recipe should cover about 4 trays. Dehydrate for about 30-40 minutes then pull out each tray and use the back of a butter knife to score lines in the mixture. This will allow the mixture to be broken into chips easily later. Put back into dehydrator for about 8 hours. Remove each tray, flip and peel off wax paper, then put back into dehydrator for another 8 hours or until chips are dry and crunchy. Break into chips and enjoy!
This recipe was inspired by Matthew Kenney from his book "Everyday Raw"
Music I listened to while making these chips
- Flaming Lips - Zariaka - on vinyl - This incredibly unique album was recorded by 300 battery-operated portable tape-players in a parking garage in 1996. The result was nothing short of amazing. 4 separate cd's, or vinyl are to be played on separate players in unison to create a concert like experience. To my knowledge no other band or artist has attempted anything like this before or since.
It can be difficult to match up 4 vinyl at one time let alone find four record players for the experiment and 3 friends crazy enough to do this with you. The music matched up or not some how comes together beautifully. You can even play just 1, just 2 or just 3 of the albums for a completely different experience. I highly suggest you find a copy and give it a go. Flaming Lips can be a bit weird, but they are never boring. If you need further proof, go see them live.
- Traffic - John Barleycorn must die - on 8 track
This album is an old favorite of mine, and I recently found a copy on 8 track. The long blues rock jam on Glad and Freedom Rider are sure to please any classic rock junkie, and the folksy nature of John Barleycorn Must Die brings a traditional feel to the album. Any version you can find will be a great addition to your collection, but for this dish I chose to listen to the 8 track.

- Gayle Skidmore - Firecrackers - from the album Make Believe
I first fell in love with Gayle's voice with this stunning album. She has a sound that needs to be heard everywhere. Rest assured you will hear much more of her work in my future videos.
