I was searching for something to hand out as a sweet treat at my class this weekend on Healthy Sweeteners and Blood Sugar Balance. I adapted a recipe I found in one of my favorite "cook" books called Raw Food Made Easy for 1 or 2 People by Jennifer Cornbleet.

Raw Vegan Almond Cookies

Doesn't look as pretty as a baked cookie but it tastes much better than one!

The recipe goes like this..

1/2 cup Raw Almonds (not soaked)

1/2 cup Raw Walnuts (not soaked)

Dash of Himalayan Salt

1/3 cup Pitted Dates (soaked)

1/2 tsp Almond Extract

1/4 cup Unsweetened Tart Cherries

1/4 cup Almond Flour

Put almonds, walnuts, and salt into a food processor and blend until nuts are coarsely chopped. Then add the dates, cherries, and almond extract and blend again till all ingredients are mixed thoroughly. It's good to leave the mixture a little bit chunky. Use a spoon and dish out ping pong ball size portions into your hand. Pat and flatten these into round cookies. Dip the cookies into the almond flour for a less sticky exterior. Refrigerate for 1 hour before serving. Cookies will keep in the refrigerator for 1 month or in the freezer for 3 months.
